"Taste and see that the Lord is good; blessed is the man who takes refuge in Him."
-Psalm 34:8 (NIV)

Feature Recipe: Empanadas (Paraguay and Mexico)
an excerpt from International Recipes for American Kitchens
produced by AIMS

Ingredients:

1 1/2 lb. flour (sifted)
1 cup water
1 tsp. salt

Filling:

Grated cheese
Tomatoes and onion (diced)
Garlic (minced)
Chopped chicken or ground beef (cooked)

Cooking Directions:

Mix pastry and roll out on a board so it is relatively thin and elastic. You should be able to pick it up from the board without breaking it. Cut the pastry in squares (about the size of turnovers). Mix together ingredients for the filling. Put filling on top of pastry squares and fold the squares over, sealing the edges with egg white. Deep fry until they are brown and fluffy.

Serve hot.
